Love and Chocolate

Many of the world’s greatest endeavors are founded on relationships, the simple bond between individuals that allows them to create something new and beautiful. Carl and Mary Matice experienced this phenomenon first-hand when they stumbled upon the idea that would forever change their lives, Altus Chocolate. At a ladies’ night with her friends, Mary watched a movie called “Chocolat,” a story about a mother and her young daughter who use chocolate to change the rigid outlook of their new town and spread a little more love and laughter. A Time Before Chocolate?

A Time Before Chocolate?

Can you imagine not having chocolate? We can’t either, but the fact is that it didn’t always exist. That sweet, deep decadence that we all love has really only been around since about 400 AD when many scholars believe the Mayans first began to cultivate the cacao plan. Even then it still wasn’t the same chocolate we know and love today. In fact, the cacao plant wasn’t even always the same. What goes into chocolate now is actually the result of selection and crossing that began around 3,500 years ago. What the Mayans called “xocalatl” was...

Cocoa or Cacao?

I am often asked what the difference between cocoa and cacao is. Since they are different names it is assumed they represent different products. These two terms are pretty much interchangeable. Cacao is the original word and comes from the name of the tree Cacao Theobroma, so most South American countries use cacao. Cocoa would also be a confusing word in South America, as the word Coca in South America refers to Cocaine. The name cocoa is mainly used in the US, I imagine the language transfer created the different word. Cacao can be used for...

Single Origin Chocolate

The concept of single origin chocolate is a fairly new idea in the USA, with some of the first manufacturers starting in 2006. Because it such a new idea for chocolate we are continually educating customers on the concept. Most wine enthusiasts know that different terroir (soil and climate) can change the flavor. We also have seen the rise and popularity of single origin coffee. Most people are familiar with the differences of single origins like Sumatra, Colombia, Mexican, and Ethiopian. They taste vastly different just because of where they...

Caffeine in Chocolate

Customers often ask how much caffeine is in a chocolate bar. Some of them are looking for an afternoon pick me up, while others are concerned about the side effects of caffeine. There is a common misconception that chocolate has as much caffeine as coffee or black teas. The truth of the matter is that chocolate actually contains very little caffeine. In fact you would have to eat about a half a pound of dark chocolate to get the same amount of caffeine as a cup of coffee. Caffeine is even lower in milk chocolate, and non-existent in white...

What does Altus mean?

“So what does Altus mean anyway?”   What does Altus even mean anyway? As you may have gathered “Altus” sounds kind of like the word “altitude” or “altimeter” both of which have to do with height. Altus, is in fact, a Latin adjective that means high or lofty. Altus Chocolate creates a “higher sweet.” But what does that mean? Altus isn’t just a fancy name, it’s a way of life and a standard of chocolate making that we don’t take lightly. We make a higher sweet from bean to bar and on every level we are committed to making that our guarantee to...
